Purple spaghetti
My granddaughter and I had a running joke that we were going to have "purple spaghetti." After searching for some for quite some time, I finally found this spaghetti. Not only is it purple, but it tastes great, too! She and I both loved it!!

Purple pasta!! (And it tastes good!)
I like that this is gluten free, and while it does taste a little purple it still tastes like regular spaghetti! This is not in an artificial way, but if you've taste buds that are sensitive to it, anthocyanins do have a distinctive flavor. It's pretty mellow in this spaghetti, despite the intense color which does cook out a little, but you still get a lovely lavender-colored spaghetti.

Slightly chewier than “regular” pasta
What a fun color purple pasta! Was excited to feed to my kids. The picky one was not a fan, the unpicky one thought it was okay but the texture is slightly chewier than standard pasta, making it not their favorite. I thought the color was fun and I appreciate the nutritional value of this option. Also, the fact that this exists as a gluten free option for those who are needing that but still want something spaghetti-ish is amazing.

I ordered the Big Green Organic Purple Sweet Potato and Millet Spaghetti out of curiosity. I also liked the idea of a “pasta” that had more nutrients and healthier ingredients than standard spaghetti noodles. I followed the directions on the package to prepare the spaghetti. It recommended boiling the spaghetti for eight minutes until al dente. For me, the eight minute boil made *very* al dente spaghetti, and I ended up cooking it for few extra minutes.The taste of the spaghetti is slightly different than traditional spaghetti, but very pleasant. I used it with traditional pasta sauce and parmesan cheese. I think the product is versatile and could be used in a variety of dishes. I just don’t have that big of a recipe repertoire, so I’ve stuck to using it for traditional spaghetti with tomato-based pasta sauce.I would order this product again.

Nice gluten free option
I'm familiar with cooking with sweet potato noodles to make japchae. (Korean noodle dish) So, I thought I'd make a purple yam version using my usual ingredients. This didn't have the same clear, glass noodle texture that the sweet potato Korean version has, rather a more regular wheat/brown rice pasta texture and flavor. I could tell after cooking/draining this pasta that it would not hold up to me mixing all my prep ingredients into it. (it's kinda a vigorous mixing) I winged it and blended my veggies and meat with the seasonings first, and then topped it on top of the pasta with a sprinkle of sesame seeds. Tasty! (although, I prefer my usual japchae glass noodles for that Korean dish)Tip: Make sure you do not overcook this! It needs to be an 8 min al dente, else you'll get a mushy texture. Set a timer on this. the flavor. This is another great option for those that are gluten free and looking for variety.

Thought the kids would get a kick out of purple spaghetti. Although they were impressed by the color not so much by the weird taste, the spaghetti had a "gummy" yet un cooked taste to it!

Really tastes like regular pasta
I've tried some other alternatives to traditional pasta without finding one I love. Some taste downright awful, so I wasn't super hopeful for this Big Green Organic spaghetti. But, I was pleasantly surprised that it tastes just like regular pasta -- no after taste and similar texture.I cooked it 8 minutes as directed, and that might have been slightly long since it came out a little softer than I consider al dente, but not too soft. When I drained the water, it was purple but the noodles remained plenty purple. I think it's a fun color.The real test was serving this to my picky 9-year-old. He said it looks like alien spagetti, but didn't object to the color. His only complaint was that it was sticky. I mixed mine with sauce and didn't notice this, and it didn't seem to bother him once he started dipping his into his sauce on the side. He gave it 4 stars, which is a win. It gets a 5 star from me based on the flavor, healthy ingredients and because it is kid friendly. Recommend.
