With these being stainless steel, why can the bowls not go in the oven?

Will a magnet stick to these bowls? I'd like to use an induction stove for warming.

No. A magnet will not stick to it. Plus the bowl is double wall. So it is not a good conductor of heat. That's why I bought it for ice cream.

Are these good for open flame

NOT SURE WHAT YOU MEAN BY "OPEN FLAME"? I use these nice stainless steel bowls for eating cereal, ice cream, soup, or for mixing uses.

Are these warranted for rust?

I have one outside as a water bowl for the cat ,, been there a year no rust
