Can you use this with a ac adapter?

It has a built in USB lead (coiled in the base of the unit). The instructions tell you to plug this into the Switch cradle but I have plugged it into a separate USB plug (a spare 2A one from an old tablet). It works fine for me.

How long does it take to charge the controllers? (With all 4 slots in use)

I honestly don't know, because I have never ran my joy cons out. But even from around half power all 4 charge within an hour. I find it hard to run them out.

Do I just put the usb charger plug into the usb plug in the switch console in order to charge the 1 controller I have

Yes, this uses the usb port on the switch docking station to charge 4 joy-cons. If you only have 2 joy-cons no point buying this as you can charge them off the switch anyway.
