The info says will hold 60 lbs, the picture says 90 lbs. which one is true?

Wow, 90 pounds? Perhaps if holding it from the bottom..... I'm not even sure I would use the straps for 60 pounds except for maneuvering in a space like sliding it into a hatchback. This is not a heavy-duty bag. This bag probably could hold 2 X 50 Lb blocks of salt.... I would wear steel toe shoes if I was going to carry them very far :-) Works great for pizzas and catering.

Will this work as a cooler for the beach (with ice)?

It’s very large so you would require a lot of ice packs because so spacious. Also no bottom support.

Will this keep ice cream from softening, in high summer heat, for at least 30-45 min? I bike to grocery store…it’s summer.

It will depend on how much dry ice you use. Normal "blu- ice" would probably not do it as it is barely cold enough to start. The ice cream I purchase will start getting soft at 5 - 10 degrees. It is soup by 30 degrees. I use several re-freezable containers and use mostly for vegetables and items that won't spoil during my 3 mile drive home in a 140 degree trunk. While advertised as "Heavy Duty", that is strictly the advertising writer's subjective opinion. I have not found any sites that give objective measurements.

How long will this keep a couple of baking dishes hot for if putting the pans in the bag straight from the oven?

Don’t know for sure but it’s light weight insulation. Doubt it would be very long.
