In my opinion it should be ok for 300 ml jug. You can't check temperature by first 2-3 cm of thermometer.This is my observation.

Can this probe be used to ascertain the correct milk termperature when making yoghurt?

All I can say is that the markings on the dial range from -10 C to 100C or 0 F to 220F. So it will register any temp in this range. This is primarily a milk thermometer for texturing the milk for microfoam. For this reason the required temp is marked on the dial in red ie 65 F to 70 F as it is crucial not to exceed 70F for microfoam. I must inform that the immersible stem or probe of this therm is 10cm (full length with clip is 14cm). Just enough for the milk pan or small milk jug. I hope this helps.

can this be used for cheese making

I'm not entirely sure? If you require a temperature gauge for cheese making then I can't see it being a problem.....But if not id check that with the company selling the product.....Hope this helps! X
