The only reason I could give would be ease although it doesn’t make much sense in the promotion of the product. I’ve used these tart pans on numerous occasions with standard, all-butter pie dough and have never experienced any problems. It takes a little time and a gentle hand to coax the dough into each flute but the results are lovely!
