My new sink has 8" hole spacing, will this work?

Not exactly sure what you mean by 8 inch whole spacing. There are three units on this system. One in the middle for the water, hot cold etc. Then there are two units on each side of this. Those measure over 8 inches apart. They are about 9 or so. They are used to secure the unit in place. Hope this helps. It is a good little unit.

Can this be mounted without the base plate and swiveled between two sinks?

Yes, it can be mounted in a single hole without the 3 hole base plate. The swivel action is still active and can not be disabled or fixed in one position.

Do you have to hold down the button while using the spray setting, or is it a switch you can let go of?

Push the button down , this will start the flow. To stop it , just push the bottom again. You have to turn the water on first before you start.

The pull out handle will not stay in the holder. It pops out continuously with the slightest touch. Is there a way to lock it in place.

There is no way to lock it in place that I know of. Make sure the counter weight is installed in the right location on the hose so that it is always putting downward pressure on the hose connected to the pull out handle. .
