Does the scanner be run independently or will it only run off once the software is installed on a computer ?

I've not installed the software and have been able to scan documents. All it needs is the driver. So long as your program is able to find the scanner, and send it a scan request, then it should be able to. I've only used GraphicsGale, but it's always worked for me.

can the scanner be set up for multiple computers or only one?

It connects via a USB port. If it on a network, this is possible. However, it needs the operator to be adjacent, so to use it on multiple computers, it only needs the software to installed on each, and simply plug it into the associated USB.
