Can you actually sit while using this? I'd like to use it standing but also have the option to sit and use my laptop on it. Thanks!

I wouldn't use it like a desk. Its lowest setting might still be too high. I'm kind of a shrimp at 5'8" (but still taller than Tom Cruz) and it would be too high for me. Also, there isn't much space for your legs and it's so lightweight that if you put your feet on the support it will probably roll away. Standing up might be a good option as it will keep you from getting tired of sitting unless you want it for a desk because you're tired of standing.

How practical is this as a portable solution? Once installed, if one wanted to load it in their car and take it somewhere else to use, could you?

It would be reasonable to load in a car, but it is not collapsible. The legs/casters are fixed, the are going to be the most problematic to fit in a car... but no problem if you had a wagon w/o fold down rear seats. I think you'd have trouble fitting it in the back seat of sedan. The top tray is tiltable.

can the top desk be adjusted from an angle to level?

Yes it can be adjusted to level. Just beneath the top desk are two clamps, on on either pole, which can be loosened, permitting the top desk to move continuously from different angles all the way to a level position. Loosen the clamps, move the top desk to the desired position, tighten the clamps.
