The convex and dimpled traditional bottom (desired for how it helps toasting of the rice) is better for gas and not induction. For induction there are heavier steel, completely flat-bottomed pans that are also not dimpled--well they are inside but you don't feel them underneath. A well-known brand in Spain is called Pata Negra and has black handles.
