We could process Real Salt to remove the silica, of course, but these natural minerals are exactly the reason so many people won’t use anything but Real Salt. How does the crystal size compare to Diamond Kosher salt? I prefer a grain bigger than table salt but not so big that you'd need to grind it.

Kosher sounds like the perfect size that you are looking for! It will be bigger than the granule size of a standard shaker but smaller than the size of granule that you will need to grind.

Will this work for making keto crackers?

We aren't familiar with the process of making keto crackers, but this salt can take place as any current salt you are using. There shouldn't be any reason why it wouldn't work.
