I love this makiyakinabe because I love making Tamagoyaki. At first I made Tamagoyaki every day including a couple months before I got this pan. It is not easy to make Tamagoyaki in a round pan. Making Tamagoyaki in this pan is much more easier and satisfying. I make tamagoyaki regularly with three eggs but I willake it with four eggs for several days after I have had a migraine or any kind of illness or pain because I think my body needs more protein for healing. It is a little more difficult to make a tamagoyaki with four eggs in this pan but occasionally I would like to indulge in six eggs without having to use a round pan. I guess that means that my tamagoyaki is going to get a big brother some day. My current workaround is to make two Tamagoyaki with four eggs. Yes, I am quite aware that 4 times 2 is 8 and more than 6. However I must say that I must do what I must do for the food I eat. Somehow, a three egg tamagoyaki is a bit of a disappointment when you want a filling and thick Tamagoyaki to pick up with your chopsticks. So 4 is the number that satisfies until I buy a pan that is made for making tamagoyaki with 6 eggs. Also, my tamagoyaki doesn't stick to the pan when I add enough oil. I admit that I add more oil than I would like to avoid sticking to make a perfectly beautiful tamagoyaki. My preference is to use peanut oil. But even when I fail to use enough oil for a layer, this pan cleans easily without scrubbing buy just letting it sit in hot water about 5 minutes when you wash it. In the middle of a layer, you can scrape it up with a wooden spatula. The included spatula is great for flipping tamagoyaki but is too flimsy to scrape up a little sticking spot. Just keep moving, pour more oil, lift the tamagoyaki completely while tilting the pan to spread the oil generously over the part that was sticking. I have also used this pan to make 2 or three fried eggs or scrambled eggs. And it is great for sauteing onions. I love sauteed onions with my meals.
