This was the assigned book for my daughter's nutrition class. She said so far it is very informative and it also has recipes. She said she plans on keeping it as a reference rather than trading it in once the semester is over. I like the fact that on Amazon it was $30 cheaper than the rental from the college bookstore.

Got a lot of good ideas from this book and have enjoyed the results ...
I have been buying cookbooks, not for the recipes but for ideas and new ways of cooking. I for a long time basically lived on pasta and hamburger meat while I was trying to get over cigarettes. I gained a 100 pounds and developed type2 diabetics. I now plan each meal around a vegetable or two. Boiling, roasting or any manner that will allow me to use minimum amounts of fats and starches. Still haven't found a low carb desert worth the trouble of making or eating.Got a lot of good ideas from this book and have enjoyed the results - every bite.

Excellent healthy cooking techniques book
Love this book which is a part of a series from the culinary institute on the techniques of cooking. It gives good techniques on traditional cooking with healthy alternatives. It also has a good recipe section to try the different techniques.

A Textbook Worth Keeping
I have bought dozens of textbooks. Most with the foreseeable lifespan of a semester. Get the information I need from them out of them to answer the questions my professors ask, then resell them or return them after the rental period is over. Not this text book. I'm keeping this puppy around. It is chock full of healthy recipes of many cultural backgrounds.

Must Have For Chefs/Cooks
Would highly recommend any book from the CIA, especially the newer versions, the book includes hundreds of helpful and very descriptive recipes with nutritional information. Also there's a lot of helpful literature in the book about nutrition and living a healthy lifestyle, the book includes cooking techniques and several pictures of tools needed for each dish.

Professional chefs only need apply!!
Okay, so this is a book from the CIA, and that would mean it's a book for the professional chef. I am not a professional chef. I just received it today and thumbed through it -- very complex, very detailed, exactly what a pro needs. Did I say I'm not a pro? When I saw a recipe that called for 10 (ten!) cornish game hens I realized I was not the target audience. I could have kept the book and found many useful things in it, but I felt overall that it was over my head and I returned it. There are books on healthy cooking geared more for the home cook and I will search for one of those.Five stars for a great book but given my distinctly amateur cooking status I had to subtract two stars for the larger quantity, professional focus of the book. If you're a culinary school graduate and/or professional chef then this is likely the book for you, but for me, not so much.
