Best Tofu book for beginners!
I ate tofu for years because it was healthy and i was trying to cut down on meat. But I choked it down, not because I liked it. It was like tasteless blobs of paste, to me. However, this book provides useful tools in learning how to use tofu, as well as great recipes. There are key recipes that teach how to change the texture by pressing out the water or glazing, the types of tofu and how to use the various firmness levels for different types of recipes, and often builds on past principles.I love serving glazed extra firm tofu with peanut sauce as appetizers for parties (useful for vegans and regular guests) and I often make sliced, glazed tofu for sandwiches or salads. Note that a lot of my carnivore friends have scarfed this treat without asking what they were eating because it was so crisp and flavorful. Anyway, there are loads of recipes from this book that have been well received. Another plus, most recipes use commonly found ingredients. I tend to give the book as a gift to any friends that are trying to get into eating tofu. as I do want people to enjoy what they are eating - for whatever reason. Try it.

Haven't used the recipes yet
I went through the cookbook & I love the taste of tofu, but don't know much about how to make tofu various ways, the recipes look tasty, but I haven't tried them yet, but soon will.

Good for beginners. Basic variety of tofu recipes.
Nice beginner's collection of recipes. There were a few recipes that I intend to try but mostly the recipes seemed like the usual tofu recipes. Not that that's really bad but I was looking for something outside of the usual tofu recipes that I already have.

Three Stellar Recipes
If you don't know where to start, start here:1. Clear soup with Sweet Potatoes, Silken Tofu and Mustard Greens. It isn't that clear and it is very tasty. Be like a horse happily munching up those mustard greens. Make a pot after work and eat it all week. It even tastes good cold. Star anise pods in addition to the five spice powder look exotic and lovely and boost the scent into cosmic spheres.2. The next week make Coconut-Red Curry Soup with Butternut Squash and Lime. Ordinary ginger is tastier and less bitter than galangal. When friends get out of the hospital bring them a jar of either or both of these soups and they will tell you to open a restaurant so they can get more.3. Mango Smoothie. The mint cool kicks up the rest of the warm flavors. This is special breakfast for your Mom and other guests.

Layout not like a cookbook
I wish I had read the reviews before purchasing. It is not written in a "cookbook" format, but as already stated, in a more narrative style. No photos. Best part of this book is this beautiful cover. Author seems very knowledgeable about tofu and how to prepare it. Disappointing that the layout is not easy, nor enjoyable to use. I gave the 2 stars for the author's expertise.

A tofu lover who is very happy with this cookbook
I like tofu. I like the texture and the taste. I often order it in Chinese and Thai restaurants. But I was not terribly successful at preparing it at home. This cookbook fixed that. The recipes are very easy and can be made on a busy weekday evening, and can be easily modified to your taste. It is true that a lot of the recipes have you pan fry the tofu but Madison gives you alternatives to the frying if you are oil averse. The alternatives work, e.g., simmering. Many of the recipes do not require frying even as a first choice. For example there are braising recipes as well as simmering recipes. The tofu in the tofu with bok choy is simmered in a delicious mild broth and this week I took it to work with rice for lunch a couple of days and it reheated perfectly in the microwave. It is important that you read the introduction to the book as it will help you modify the recipes to your taste and tolerance for oil. This is not a vegetarian or vegan cookbook although almost all of the recipes can be made vegan. If you do not like tofu I think this is not the cookbook for you. Personally, I think the title of the book was unfortunate.

Not vegan, but a lot of great sounding recipes.
While I was a little disappointed at how few vegan recipes there are in this book, most are at least vegetarian. Being vegetarian there is at least the opportunity to tweak them so they are vegan.On a good note there are some helpful tips. You will find tips on ways to season tofu and different ways to cook tofu. While it won't be my go to book I am looking forward to trying some of the recipes, modified.

Avrei voluto amare questo libro ma un libro di cucina senza nemmeno una foto, no non mi pace. Devo mettermi li a leggere ogni singola ricetta, tradurre gli ingredienti..... È stupendo sfogliare un libro di cucina e soffermasti su ua foto e direi wow, corro in cucina e la faccio subito. Ecco qui tutto il contrario e io Amo i tofu!

Excellent book
I bought this for a friend's husband who says he hates Tofu & ended up buying one for myself too. It's a great book. I loved Tofu to start with & this has given me more ideas. My friend's hubby has grudgingly said it changed his opinion too! :-)

Where are the photos?
For someone at the beginning of their tofu journey, this book has proven to be a bit of a damp squib. There is not one single solitary photograph of what any of the finished dish is supposed to look like. Not very helpful at all. Just have to hope that any dish I attempt turn out fine.
