The picture says this is 550 flour. the title says t55 flour. which is correct? is this strong bread flour or general purpose flour?

I could not source bread flour so I bought this flour instead. It has less gluten than Strong White bread flour but can be used for Pizza or a white loaf (I do not know about how it works in a bread makers, I don't use one) It gives a slightly soft crumb. I was fortunate to have some Rye flour so I mixed a small quantity of this to the flour to make Walnut bread and Olive bread. I also make Focaccia. and Fougasse. All of these have been successful. You could source some Gluten powder and add a small quantity to the flour. English Strong White Bread flour has 12-14% gluten. I found It to be adequate in a time of flour shortage. Strong German bread flour is 812 but I could not source that. My go to recipe is 500g flour, 10g , Yeast (fresh I still have a little but will soon be on dried) 10g salt and 350ml warm water which I weigh 350g. I put it on the mixer and then knead on table for few minutes then prove. Shape and place on the peel which is well floured, reprove. I heat my oven to 250c with a granite tile on the shelf slide bread in spray the oven with water and reduce temp to 230c -220c cook for 10 -12 minutes for flatter breads. Hope this is helpful.
