Hi Laura, It has a shelf date of 3 years, but as it is as well a natural preservative, if kept in a cool and dry place, you can use it beyond its shelf date, mainly because it does not lose properties. We maintain at the factory 1 lot of cream of tartar from 1998 and we keep analyzing it every year and as it is kept in a cool and dry place, it could also be consumed without problems.
