Solved my bagel problem!
This is the secret to great overnight bagels. Keeps the rise intact. Learned this secret from the King Arthur online bagel class

Bakes beautiful breads
Baked beautiful breads for a great price compared to King Arthur. Be careful not to use as much when using whole grain flours.

Great for getting more rise and better texture in your loaves.
Changed my sourdough game! Has easy to follow instructions on how much to add to your recipes on the back of the bag. This stuff gives better rise, color and texture to my loaves. Even though the AP flour I use has a little bit of this in it, I've found that adding this at about 1% of the total flour weight in my bread recipes yields better results. I use it in yeasted breads too, with great results in softer texture and better rise. I call it my "secret ingredient" but I tell everyone about it anyway.

NOT for baking
Great product and worked well for a variety of things. I tried making cookies for it and it turned out very spongy and had a weird aftertaste.
