Will this fluid work for 2015 Ford Mustang Ecoboost?

It will work fine as an axle lubricant, but not in the awesome Ecoboost engine. I would to stick either Motorcraft synthetic motor oil or something like Mobil 1 for the engine. Motorcraft oils are consistently one of the best OEM fluids for the money - I highly recommend them.

Does ford recommend switching to 75w140 from the 80w90 that was originally recommended for a 2005 Ford ranger rear differential?

I am not a Ford tech but accordingly to a Utube video yes it is recommended. But I called the service department at a Ford dealership and that is what they said so I changed mine to the newer fluid. I have a 2005 F150 5.4 3V Triton engine 4X4. I would think it would be the same for your vehicle but just to be sure I would call your local Ford dealership. It is a stinky dirty job to do, but not hard. If you have four wheel drive they recommend to do both differentials at the same time. Hope this helps you out.

Can this be ised in any ford rear end regardless of ls or not?

Call your local ford dealers parts counter. There are some idiosyncrasies present with the Ford gear oil. Its between 2 choices thiis oil and one other and you will likely need the friction modifier. Just installed 3.55's in my crown vic sport with LS, lovin' life right now.
