how much do i add to make strawberry jam?

I use 10 grams per 500 grams strawberries (hulled weight), 700 grams caster sugar, 180 ml water. Scale up or down as appropriate. I normally make many kilos of strawberry jam/preserves and for above quantities use about 50ml redcurrant juice (high in pectin) extracted from my small crop to add to the hulled strawberries. You can also experiment with preserving and jam sugars. If you grow your own strawberries it is up to you how you use them. I don't grow them any more but know when to go to the market to get them when remaining shelf life is short... Wonderful bargains to be had but they have to be jammed in 24 hours. Be prepared for trial and error...
