Authentic and Delicious Massaman Curry Paste!
I’ve been using Mae Ploy Massaman Curry Paste for a while now, and it’s definitely one of the best curry pastes I’ve tried! The 400g size is great value for money and lasts quite a while, especially since a little goes a long way.The flavour is rich, aromatic, and perfectly balanced, with just the right mix of spices like cinnamon, cloves, and nutmeg, creating a beautifully authentic Massaman curry. It’s not too spicy, which makes it perfect for a wide range of people, but you can always adjust the heat if you like things a little hotter.I’ve used it for making curry with chicken, beef, and vegetables, and it consistently delivers that amazing, comforting, and creamy taste that Massaman is known for. Very good, concentrated paste. Delicious Thai curry without all that endless prep.
I live out in the boonies and no chance of getting anything like this in the shops - Sainsbury's sell a Massaman paste, but it's nowhere near as good as this. This is a concentrated, dry paste to fry gently first, before adding coconut milk, meat (I use chicken), diced spud, onion, peanuts and tamarind. Product comes in a sealed poly bag inside the carton. Dead easy to cut a corner off the bag, squeeze out a couple of 'fingers' of this paste and shut the bag back in the carton.It's delicious. Not a belter of a Thai curry. I think its fairly mild, full of flavour and the balance of flavours is good - although I have to say, I think it is a bit salt, and needs balancing out with a bit of sugar, and it does need the tamarind. If the balance between hot and salt had been a bit better, then this paste wouldn't have lost a star.I like a dollop of peanut butter added to the sauce while it's cooking and a handful of raw cashews. That probably gives me a totally different Thai dish, but who cares. It's heavenly and so easy to make.

The media could not be loaded. Had to find a substitute as my local store took the one they offered the shelf and I got fed up mixing 21 spices to form a good paste. . This is GREAT! Massaman lamb shoulder and potatoes with sticky rice. Had it twice and have enough sauce left over do a chicken one tonight. Easy to use.Take two, did a pork massaman with potatoes and green beans. Fried onions, par boiled the spuds a few mins before, I used 75g of paste for a deeper flavour, and a tad of water on a lower heat to make sure I didn’t burn the spices, pork in, milk in, spuds, beans and extra coconut cream and voila! The temple of massaman! Jasmine rice and a shovel also required. If you want heat, use chilli oil to your tastebuds, mine tend to be hot.

Fragrant taste due to lemon grass.
Inside the tub there is a sturdy plastic bag full of the actual curry paste You must squeeze it out into the tub, or wherever you want.I made the mistake of not adding coconut milk the first time I used it, it tasted over fragrant.When I added coconut milk , the taste transformed. It was still quite fragrant due to the lemon grass but tasted more like an authentic Thai curry. Massaman curry is mild and this curry paste was.I wouldn't say it was like a Massaman curry I have had in Thailand but it tastes pretty good.
