Is the paddle as a blade?

It is just a paddle that mixes- not a cutting blade.

What is the capacity of this mixer?

It will do what it says on the tin. I find it very useful, I used to mix all my meat by hand, which was very slow and hard graft. What used to take a couple of hours can be done and dusted in 10 minutes and well mixed as well. It’s made of good materials, and easy to clean. I recommend it.

Is this water tight? If I have water inside with the meat, will it leak out of the holes on the side?

Hi. There are 2 holes in the body of the mixer. One is water tight but the 2nd one, which is where the handle is attached, probably isn't 100% water tight. I've never had anything leak out of that side of the mixer and I'm mixing chicken grinds, minced beef and liquidised chicken livers in mine for my ferrets. Apart from weight of it, I'm really happy with mine. It does the job 👍👍
