you get 6 bulbs. each bulb has several cloves. split the bulbs into cloves and plant the cloves individually. having said that, 98% of my cloves never grew.

I specialize in hardneck garlics. Yes they' will keep and you can plant in spring. I do it all the time. You'll get good full bulbs, not "scapes" which are the flower of garlic.

Zone 8, if i refridgerate them for a few weeks and plant in May, will they grow OK?

Typically garlic is planted in autumn. Put worth a try. Although it might need cold weather. When I didn’t get mine planted last October, I used them in cooking.
