Rather have this than an expensive $400 Polyscience.
This is a fairly well made device, it is slightly heavy and large giving the impression of quality and when it runs is has an almost soothing sound.Before this I was trying to use a pan of water in the oven and I had figured out the exact knob position for 135, but when I purchased and used the Anova the meat (1.5 inch thick sirloin) came out much softer. Ribs (138 F for 24 hours), and Salmon (122 F for 20 minutes) came out wonderfully soft and juicy.When I first got it I was anxious to test it out so took a boneless chicken breast, and just sprinkled Italian Seasoning on both sides then vacuumed packed and set in the water at 143 F for 2 hours. I was surprised that the flavor from the seasoning penetrated all the way through the meat. The chicken was moist as well, not dry.One thing I really recommend is to use a cooler instead of a stove pot. If you have a cooler then you can put it anywhere, for example so its not in the wife's way, and the outside of the cooler does not get hot and since it is insulated I am guessing uses less power to maintain temperature. I purchased a small $16 24 quart cooler (From home depot but here is an amazon link: http://www.amazon.com/Rubbermaid-Cooler-Chest-24-quart-FG2A1304MODRD/dp/B000690FPU/), that's a better price than a large $50 20 liter "chef" pot. When using a cooler lay some aluminum foil over the top (shiny side up to prevent radiant heat) to retain water and heat.I could have purchased a $400 polyscience device but I just cant see why when this device seems to work perfectly well.For the nerds out there: I used my KILL A WATT to measure the power drain. The device fluctuated between 980-990 watts while bringing the water to temperature (122 volts). In my 24 quart cooler it raised the temperature 1.4 F per minute. To maintain 143F it pulled about 150 watts. To maintain 135F it pulled about 85 watts. Cooking ribs for 24 hours at 138F used a total of 2.25 kw. That's about 30 cents of electricity. Also it had some sort of pulsating power supply that causes the lights to flicker every half second or so. Annoying because it is the same effect as when you look at a light and blink your eyes. Not a big price to pay though.Here is some initial food experience:1. First off I had no patience and wanted to play with it, so I took a plain boneless chicken breast and put simple Italian seasoning on it and vacumm packed at 143 F for 2 hours. Seasoning penetrated the meat all the way through which was surprising and the breast was juicy, not dry and partly softer than normal cooking.2. Ribs! I cooked ribs for 24 hours at 138F. The meat was very soft, so soft that I ate them very quickly. It was nothing to bite into the meat, no pulling - just bite it like a cookie. It was juicy too. Btw after cooking, pat it dry then put a layer of BBQ sauce on it then put in the oven and turn on the broil. After the BBQ sauce starts to boil take it out. It only takes a couple minutes from start to finish.3. 1.5 inch thick sirloin. This was at 135 F for 5 hours. Probably too long but I put them in at lunch and took it out when I came back home. Meat was soft and evenly red throughout. It was perfect cooked. After you take it out of the bag, sear it for 1.5 minutes each side. This will make a crust, but goes very well with the soft inside.I will be using sous vide to cook all my meat now.

Breaks after two months, warranty response very, very slow... if any
When it works it's great. I had it for just over two months, i used it maybe once a week and the heater stopped working. It says it has a year warranty, well great. But has been a week now that I'm waiting to be approved by the 'support team' if warranty applies; what???! Over a week since I emailed them plus have filled some online forms and still have not gotten a response. Well, maybe they have been very busy? but what is to be evaluated here, sent me the address where i need to mail my unit! it's still under warranty - nothing to think or ponder over.This leaves me to think that potentially, my unit might not be serviced... I will follow up once I get response from the support team and\if i get it fixed.Even best things break, it's the service that follows which counts.

The circulator was busted. I kept having to take ...
The circulator was busted. I kept having to take it apart to position the circular so it wouldn't rub up against the casing and make noise or stop. also, the temperature varied wildly and did not remain as consistent as I needed. This could also use a start timer for certain items… returned.

It is easy to program for temperature and time
This device seems to work as described. It is easy to program for temperature and time, and you can choose either Fahrenheit or Centigrade for your temperature scale. The only reason that I give it four stars is that the electric cord does not seem to seat firmly in the socket. I had to send one back because the cord came loose too easily and the circulator stopped working during the heating process.I think that this is a minor design flaw, but if you are careful and firmly push the cord in to the receptacle, it should stay in place.

Great product. Easy to use, attractive/Intuitive display.
A friend told me about this way of cooking. Wow, what a difference! Evenly cooked throughout. Keeps all moisture and flavors in.My first one had a defective sensor within 4 uses, so I returned it and tried the lesser expensive Anova. A mistake. I'm sending it back and getting this one again. This has a MUCH better display, is more intuitive, and has auto-shutoff. The other one can work with your SmartPhone and a downloadable app, but it connects via Bluetooth not WiFi, so you have to be in range which isn't far. So it's not very useful. For the small difference in price, this is a much better value.Update: I returned the lesser expensive one. Thanks to Amazon for making sure the customer is happy. And thanks to Anova for reaching out and wanting to address my displeasure with the other one. I'm using this one again and it's a joy! A terrific product. Everybody remarks how much more flavorful, tender, juicy, and evenly textured my Anova foods are. And it's so much easier than grilling, baking, or even BBQing (though I still love to BBQ).A great product from a great company!

Unit failed in the middle of cooking fillets for a Christmas party
Purchased this for use during Christmas dinner with some fantastic fillets.. Half way through the cook cycle, with a party in full swing, the unit stopped circulating, beeped, and displayed "error". Tried numerous variations of resetting the unit without success. Ended up cooking the steaks on a grill.

first one non-functional
First attempt at use, didn't work. Circulates like mad, does not heat at all. Website support totally useless, "Contact Us" phone number not working, tried e-mailing, now I have to wait for a response, and in the meantime, I guess I will have to make alternate dinner plans.EDIT: Contacted Anova. They are not exactly super-quick to respond to messages or emails, but a couple weeks later, I have a new one, which works fine. They sent it, FAST, as soon as I sent them the shipping number for the first one (they paid for the shipping both ways). I am satisfied.
