Purchased this knife last February, looked like a good deal. Finally had a reason to use it with the Christmas sales of ribeye roasts about half off. This knife is amazing! Paper thin slices are so easy. Great feel. Highly recommend!!!

My original review.."I hate leaving a review like this but I'm really disappointed in this knife. I bought two knives ftom Kyoku at the same time. I bought this 10" Scimitar and their 10" bullnose. the bullnose is perfect.Sharp all around , balanced well, and a nice handle with smooth metal edges and bolsters. This knife look great in the box.The blade is sharp and well balanced but the handle is a total failure. The bolsters are raised and rough edged..The Metal edges are as well. Its like quality control fell asleep here. That I should buy two similar knives from the seller at the same time and they are so different quality wise is concerning. I can not recommend this knife and advise buyers to carefully check the handles before gifting it or keeping it." Revised 1/9/26 I reached out to the seller and they were very responsive and apologetic. They replaced the knife in question quickly and sent me a knife much more in keeping with their other blade quality. Customer service here is awesome. The knife I received is a gem.

I bought the Scimitar knife specifically to cut a couple of ribeye roasts into individual steaks. This knife was perfect to do so! The box and sleeve it came with were an extra bonus in my opinion. The KYOKU knife would also make a great gift.

Very sharp right out of the box. Cuts raw steak very easily. The knife is somewhat thin and a little flimsy. Wish it was a little thicker for durability.

I bought this to carve up a prime rib. I had a 14 pound bone in cut. Slid the knife alone the bones to remove and it cut flawlessly through the prime rib. Made 1 inch thick cuts and it cut straight down no effort and came out nice and uniform. I've never been able to make nice cuts like this before. I liked the knife so much that I bought the whole knife block set with extra steak knives. They all came very sharp too. You cannot wash these in a dish washer. Hand wash only and dry right away or they will spot. Excellent knife for a good price.
