Great beater knife
1 year review. Great knife for $50 for the average home cook who needs a gyuuto style knife they can throw around in the sink and share with the household. Its thin blade allows it to remain moderately sharp enough for general work and 8” is a great general purpose length. Grip feels good and balance is fine when pinch gripping. I bought this knife for people who don’t take care of their kitchen knives lol. So far it’s held up better than their other cabinet full of dull knives. The tip is, of course, already gone from its repeated drops into a stainless steel sink. The edge angle of the knife is around 15 degrees so even when it’s dull it will still be able to do most things. I paired this purchase with a pull through sharpener because it’s a $50 stainless steel knife. If you are an above average home cook who does not mind handling carbon steel and doing a weekly sharpening, this knife is probably beneath you. If you’re a busy person who needs a knife they can reliably throw in the dishwasher, sink, etc. and just run through a honing rod/pull through for some quick scallion work — this is not a bad option.

Pros: Made in Japan, excellent presentation, ideal for a gift, well made, nice weight, good price, full tang, triple rivet, nice grip, convenient size, sharp, feels balanced and comfortable, cuts without effort

Great edge, rough finish
The knife takes a sharp edge when sharpened properly (much better than the factory edge) and holds that edge longer compared to traditional steels. As for the finish, the handle has some imperfections—certain edges of the wood, steel, and rivets stick out and are easily noticeable to the touch, making it a bit uncomfortable in the hand. In my case, I used fine-grit sandpaper to smooth out the edges. The spine of the blade also lacks proper finishing. If the manufacturer addressed these details, this would be an excellent knife.

Best knife yet
Best knife had compared to shun and Mercer and Dexter Russel and custom made jap knifes, extremely thin blade not for heavy duty applications like squash but cuts like a beast for fine work in kitchen. Can be used professionally but handle is a little flimsy and made of wood.

An excellent knife for everyday use
An excellent knife for everyday use. I have been using the knife for over 8 months, from breakfast to barbecues. I have used it with all kinds of meats and vegetables. The knife has pleasantly surprised me. I haven't sharpened it with a stone yet, I've only used a honing steel, and the knife still cuts a tomato in half just by dropping it. The edge has lasted much longer than I expected. I don't think you'll find a knife with better value for money that is as sharp as this product. It has the advantage over my high-carbon knife of being easier to care for without fear of rusting, so I consider it an excellent choice for everyday use. I will try the brand's other knives.

Good quality knife at a good price
Ordered these for corporate gifts, I paired it with a nice cutting board and these knives were very well received! I feel like the quality is excellent and they seem way more expensive than they are.

Honest reviews for regular people! The presentation box of this blade felt like receiving a remnant from the ancient Samurai! The Japanese alloy AUS-8 steel, is rust resistant, and razor sharp, this 7" inch fillet, and boning knife - from Kanngou - is a beautifully well crafted blade! The black pakkawood handle, shows fine-grain detail, and the hardened steel (HRC: 58-60) blade runs full tang - from the handle end, to blade point. The exceptionally intricate mosaic inlay pin was also, beautiful on the handle - making the knife more of a show piece - excellent for gifting! The added certificate of authenticity adds a unique touch, to owning this blade (like you own something quite special). The only slight "imperfection details" noticed were - I could slightly, feel the metal edge on the top side of the handle (in some small areas), above the wood handle and, stacked horizontal type marks were visible on the blade, just after the finger guard. The only other thing to note is the inherently obvious but, also - potentially dangerous - part in the crafting of this beautiful blade... how incredibly sharp the microconcave blade edge is! This knife requires discipline, respect, and caution - while in use or, cleaning the blade. The Kanngou 7" inch fillet knife is an excellent value, and really lends itself to being a show piece to admire by anyone - with having the benefits of practical use, as well. This is definitely a recommended product, and certainly worth your consideration. Thank you for reading!

This Santoku has quickly become my go-to kitchen knife. It’s extremely sharp right out of the box and handles just about everything with ease – from chopping vegetables to slicing meat and even mincing herbs. The blade feels smooth and precise, and I love that it doesn’t struggle or drag through ingredients. It’s also well balanced, which makes a huge difference during longer prep sessions. The pakkawood handle feels comfortable and secure, and the full tang gives it a sturdy, reliable feel. I can use it for a long stretch without my hand getting tired. The hollow blade design is another nice touch – it really does help keep sticky foods like potatoes or cheese from clinging to the knife, so chopping is quicker and less frustrating. On top of being a great everyday chef’s knife, it comes in an elegant gift box that makes it feel like a premium piece of kitchen gear. Overall, it’s a durable, sharp, and versatile knife – a perfect staple for anyone who cooks regularly.
