... in a Marriott Residence Inn hotel and as I like to cook
I ordered this knife cause I lived for more than 8 months in a Marriott Residence Inn hotel and as I like to cook, I started getting crazy with the junk, they provide as knives. I also ordered the 210mm blade version and used both now for a while. I really like the design and the quality. Of cause there are even better knives on the market, but for more $$. I could still cut a tomato by just pulling the knife by 2 fingers after > 6weeks of usage with vegetables and some meet. To me the price/performance ratio is great. I just sharpened it after coming back home on a water stone and it just took a few strikes and it's razor-blade sharp in both directions again. I recommend this knife. For the $$ you paid, you get a good knife that will satisfy every private cook. Just don't forget to maintain it with proper manual sharpening on stones in a 15°-17° angle.

Great value
This is basically a Shun at a 1/3 of the price. It’s almost identical to the classic series and the same parent brand. I have quite a few very high end knives including customs. This is easily the best value I’ve seen. It was a accident I even ordered it. I was just looking at it and the app makes it easy to add to cart. My wife assumed if it was in the cart I wanted it. I’m glad she did.

Lightweight and sharp out of the box.
This is basically a Shun Classic but half the price. Very sharp out of the box, but not quite to my standard. Polished up in just a couple of minutes. The spine is thin, and the handle is light. Balance is ideal for pinch grip. It makes quick work of everything I've thrown at it for the last 3 months. Keep in mind that the blade core is VG10. VG10 chips easily so avoid bones like the plague. Any care/maintenance advice a Shun Classic user would give you is applicable here-- such as: don't use a honing steel on it; lap or strop only. Personally, I don't recommend this knife in a professional kitchen for this reason. Though it can certainly stay sharp for a full shift, you'll need to be kind to it. Honestly, feels like a steal at this price. Factory knives like these tend to be consistent, so I believe it can be purchased with confidence.

Excellent budget Japanese chef's knife
Pros: 1. Solid slice, comfortable grip (Male with slightly above average sized hands), looks appealing and professional. Cons: Took over a month to arrive, the Japanese lettering has came off after half a year due to it being the only knife I used for cooking.. the edge is a little tricky to keep sharp.. If you've owned other Shun products this is pretty much their lower end of chef knives.. the handle is quite light and the spine of the knife is relatively thin for the size of the blade so that just comes down to personal preference..

Very sharp and light weight.
My sister bought a Shun classic of this type and she showed it to my wife. My wife fell in love and asked our children to buy it for Christmas. But, I knew they would not spend 170 bucks on a knife. Heck I am the one who bought their wusthof and Henckels set of knives. But I never pay 170 for a knife either. The reviews said this is as good as Shun classic for half the price. I took a chance and the wife liked alot. and They lived happily ever after.

Bought as a gift
Blade rusting already, not the high quality they advertise it as, avoid buying it and buy a different make. Delivered April 3rd 2024, now July 9th 2024, I ordered this for my Daughter a Chef, after use she wipes with a cloth and dries it, knife is kept in a kitchen draw with other Chefs knives, described as Stainless steel, cannot be, must be a fault in making it, not the high quality you advertise it as. sold by Kai store on Amazon.com.

Highly recommend
This knife is great. Got one as a gift and then purchased this one too. I have the entire Cutco set and this is just as good. Love this knife and I am in the kitchen a lot.

The knife is great. But the delivery time is probably the largest issue. The knife: - Cuts smoothly(even with typically hard-to-cut things) - Easy to keep clean Delivery time: If you're in a hurry for a knife, and you live anywhere outside of Japan, it likely won't arrive in time, at least while pandemic issues are still present, and filling up customs. However, if you're in no rush, and you want the knife at some point, not necessarily the immediate future, then this can absolutely be disregarded.

This Kai and also Kai Shun, Miyabi are manufactured in same factory in Seki Japan and all are owned by Zwilling. Their knifes have proper hardening process compare to other artisan or small factory knifes. The finish is neat, nice and precise in all detail. This one is VG10 core Damascus steel, having 60 Rockwell hardness which allow to have very thin edge (Japanese style) and that is why, it is very sharp, be careful. And because it is hard steel so it is brittle, don't sharpen it with v shaped knife sharpener, use whetstone and leather strop only. The VG10 Damascus knife is not expensive but not cheap. The price here is bargain at 70$ including shipping, tax and import fee. I bought another one as a gift for my friend on the way. Quite happy with quality, price and its beauty.

The knife is looking good but after 4 days experience some defects came out (5 now). It is only cutting vegetables that is not I am expected as a made in Japan quality. Returned. I will only buy premium or classic series hereafter.

Ottima lama e bel prodotto; provata non appena arrivata, taglio perfetto (attenzione alle dita). Il damasco è d'effetto, ma il punto forte è il taglio e la bontà della lama.. Buona impugnatura e coltello ben pesato. Il venditore è stato molto corretto e i tempi di consegna sono stati ampiamente rispettati (arrivata 7 giorni prima del previsto).Da acquistare.

Très bon produit lame Damas il me semble reconnaître le couteau du célèbre cuisinier aveyronnais Cyril Lignac sans la griffe mais de ce fait moins cher.
