Would this be suitable for curtains and what is the length of the pattern repeat?

It is quite a lightweight fabric for curtains I would line them with a good lining possibly blackout. The fabric sews lovely and the tartan repeat is possibly about 4to5 inches. If you are making a small depth curtain the fabric should be okay, but if you are planning on a long/wide curtain you could find that the tartan squares don't have a good impact.

Is this material suitable for pyjama trousers?

Yes, it would be perfect for pyjama trousers, but it is not very thick.

Would this be suitable for cushion covers?

Yes you could certainly use it for cushions covers. Pyjamas, bed linen, etc. Its a lovely soft, warm, light to medium weight. I was very pleased with the quality and the colour.

Would this be soft enough for baby bibs?

It is soft enough but not thick enough for a single layer bib. You could use it for an edging or have a towelling backing. Not as thick as some brushed cottons I have bought.
