Versatile, strong, razor sharp.
I bought this to add to my Zwilling Pro set. Was looking for a hollow blade general purpose knife that was less of a rocker and more straight edged than my chef knife. This is a beautiful piece and compliments my other Z-Pros. It is true to the Asian style with a very sharp angle cut (11°) and wide blade, making for a great knife in my block and cutting boards. Regarding the Pro line, I found I prefer this to other premium designs because of the bolster design that encourages proper grip and perfect balance. Also, the edge is sharp tip to heal, something many chefs might prefer.

Excellent but unconventional santoku
I have had this knife for a few months and I like it as a good utility knife. It is very versatile, and the quality is superb, just like other Zwilling Pro knives I own are of superb quality and design. This particular model is surprisingly heavy for a santoku, and it is not balanced like a typical santoku. It is heavy at the handle. My understanding is that Zwilling also makes a "slim" santoku that may weigh less. I don't consider the weight and balance to be defects, but they are features that affected how I learned to use the knife. The knife serves well as a santoku, and can also serve as a chef knife. It's also a very good vegetable knife, and it serves well as a vegetable cleaver. So, it is functionally a good santoku, but according to an unconventional design sensibility.

Great quality knife!! Feels great in your hand and cuts through almost everything like butter!
I love this knife! Requested it for my birthday! It matches the knives set and block that we bought about 25 years ago. I love my J.A. Henkels/Zwilling knife set! The knives have held up so well over the years and I expect this one will be the same! Even through years of teenagers and adult children using them. They haven't pitted from teenagers not always washing or rinsing them immediately after use. That said I have tried to hand wash, dry and put away after use. I don't put them in the dish washer, and I try to keep the blades protected (storing them in the knife block or in the drawer with a protector over the blade). Two things that I would say 1) be careful it is sharp. I cut myself the first time that I used this knife. 2) Follow the directions for sharpening the knife. This knife could easily become an heirloom that you can pass down to your kids/grandkids. I do wish that it came with a blade protector.

My Favorite Knife
I bought four Zwilling (Henckels made in Germany) knives last summer and I thought I would use the 8 inch chef's knife the most but I actually use this Santoku more. I love the shape and the length. The dimples on the blade are supposed to keep items like potatoes from sticking to the blade but they don't work. I knew this before buying so no stars taken away. By the way, only Henckels knives that have two men on them (Zwilling=Twins) are made in Germany. The single figure means they're made in Vietnam or elsewhere. As a former caterer, it was worth paying the price for the real German knives that will last a lifetime if taken care of.

Great knife
Bought this as a replacement for a block set we bought from bed bath and beyond. The one from the set we bought had the tip break off after 5 years. My wife is what I would describe as a step down from a legit chef. Cooks 6 nights a week and everything from scratch. She loves this knife. I'll admit it's an investment but it stays sharp and won't break. I went with German after reading reviews of the Japanese brands breaking.

beautiful knife
Robust, but not too heavy to handle. Has those little divots in the blade that keep vegetables from sticking to the blade as you slice. Love it!

Great chopping blade.
Zwilling makes great knives and this Santuko chops veggies great but…like every knife I own, the veggies stick. Again, this hollow ground blade cuts veggies easily with its razor sharp edge.
