Adds a nutty flavor to scratch cakes. I replace 1/4 cup flour out of 2 cups basic unbleached flour (so 1.5 wheat flour, 1/4 cup malted barley flour).

I used it on ground up rice to make Gochujang and it definitely made it sweeter.

Trying to get my hands on this flour for a long time. It’s easy if you want about twenty pounds, not small amounts. Great price too!

additive for baking
Adding a small amount of malted barley flour to your baking makes for a more flavorful and moist finished product.

It does appear to really be distatic
The label uses the word "diastatic" twice, but then also states that the malted barley is steam dried, which would usually suggest that the enzymes got cooked off.Today I tried it anyway.The attached photos are of a pizza made with Central Milling's Organic Type 00 Normal flour, which contains no malt or enzymes. There is a little rye, semolina, and spelt in there too.It was baked on a 700f deck for 4 minutes. If there weren't diastase enzymes in the malt, it would not have exhibited this level of browning.
