Very good knife. Extremely sharp. Handmade. Excellent quality as everything in Japan.

This is an excellent knife. I was gifted a sushi knife many years ago. It is the sharpest knife I've ever used, but it requires a lot of maintenance and TLC given that it is not stainless (can rust), has an asymmetric blade (more difficult to sharpen), and wood handle (not "dishwasher safe" although I always wash my best knives by hand). The Japanese make excellent steel and knives; the Americans (aka made in China) not so much. So when I used this knife at a friend's house, I was impressed and bought one. Nice weight, balance, sharpness, grip, blemish free and easy to sharpen. It doesn't hold an edge as well as my sushi knives, but that is to be expected. It's my go to knife.

Il fait le job pour commencer en cuisine ou à la maison. Plutôt facile à aiguisé et dure dans le temps.

Una sola pieza, ligero, acero japonés. Nada más que decir, una delicia para cortar.
