Just checked mine, no purple sprinkles in them.

Do the colors bleed after mixed in baked products?

I've only used them on sugar cookies and they did not bleed. The cookie dough was moist, not wet.

Are these the ones that the ice cream trucks have?

I have been searching hi and low for the ice cream truck ones omg so I was willing to try anything. Many failed but these were the closest things to them. They are not crunchy or chalky n too waxy like some of the fake ones. The ones like the ice cream truck you can get from baskin Robbins for $2.00(in New York) or from carvel. Carvel will sell them to you in something like an old fashion milk carton for $30. If you can’t get those,then this brand will be your best bet
