Will these work to support a 10 mm thick glass wall ?

Yes, 10mm is ok, it works for 10-12mm thick glass.

What is the max depth a shelf can be?

The bracket is approximately 2.25" wide, so I would not go past 4" with the bracket centered on the glass. I put these in a tiled shower and used 3/8" Polycarbonate so I could do a curved shelf. They worked great, and are easily removed for cleaning.
