Are these good for cold weather?

In my opinion, terrible. In only 35-45 degree weather my hands were frozen by the time I could get done with a 30 mile ride. They were no warmer than my non leather perforated summer gloves. Wind tears right thru and they are not thick enough to keep you warm. The only plus, they are thin enough for warm/hot weather without being hot.

Will these gloves streth out a little? They fit but a little too tight.

They do fit a little tight but will stretch some the more you wear them. If they are too tight I would replace them. I like them tight and not too loose.

What good are soft knuckles?

Your knuckles are protected in these gloves. The material is not as soft as you might think. If you were to scrape your hand on a hard surface, hard enough to rip skin, or leather, the added protection would keep you from damaging your digits!
