Q: How long does this keep for?

I bought this exact same bucket 2.5 years ago. I used half of the bucket of tallow with 10% Peanut Oil in my deep fat fryer to make the ORIGINAL McDonald's style fries. The rest I kept frozen in freezer bags within the freezer. I am now using the last of this tallow in my fryer as I thaw out tallow as needed. If you cook your fries at 350 ~ 355f and put them in after drying them off.. there will be very little uptake of oil. Tallow and peanut oil are healthy. This tallow is excellent and has lasted all of this time without going rancid. I am ordering a new bucket tonight.

Q: How many ounces are in the 1 pound container?

128oz would be 1 gallon in "fluid ounces". A gallon (128 fl oz) of water weighs 128 oz dry. Tallow is less dense than water, so I'm unsure of the label claiming the gallon of tallow weighs 128oz.

Q: How can commenters and reviewers say this is real suet if it is soft in the fridge? From what I've read and seen, real suet should be solid.

What I received was solid like crisco but will start to melt or soften above 90 degrees. that to me is real tallow. I also have Beef Suet which is fat from the kidney area I believe and it is soft and sticky . I use the Tallow for deep frying and Shredded Beef Suet for pastries.
