Q: What is the diameter of the inside/bottom cooking surface? Wondering if this beast will even fit on my oven rack. BTW, would this make a good broiling/roasting pan for delicate veggies (bell peppers, zucchini, eggplant, mushrooms, onions), or would it scorch them and leave me with a stuck on mess?

Complete dimensions follow: outside diameter handle to handle 19.5 inches; outside diameter of rim 17 inches; inside diameter of rim 16 3/8 inches; inside bottom diameter 14 inches; outside bottom diameter 14.5 inches. Yes it would make a good broiling/roasting pan. Use a rack of some kind and no sticking. It does have a permanent non stick surface. I keep it lightly oiled. It's great for anything where you want a really hot cooking surface, like skillet potatoes, or seared beef, or vegetables. We made a huge paella last night, worked great. Hope this helps.

Q: Will a 16 inch diameter pizza fit in this pan?

No, this Lodge pan bottom measures 14 inches across. A 16 inch pizza pan would fit into the top but would never rest evenly or touch bottom.

Q: Could i use nylon ground beef choper on this pan?

You sure can!! It is just as safe as using metal utensils. I would, however, be sure to not leave it in the pan in between chopping and browning especially if you are using high heat.
